1 c. green onions, sliced
5 c. zucchini, cubed
1 clove garlic, minced
2 T. garlic salt
2 tomatoes, chopped
1/2 t. dried basil
1/2 t. dried oregano
1/2 t. paprika
1-1/2 c. prepared rice
2 c. shredded Cheddar cheese
Sauté onions, zucchini and garlic until tender; set aside. Combine remaining ingredients together; add onion mixture. Spread into a greased 1-1/2 quart casserole dish; bake at 350 degrees until heated through, about 25 minutes. Serves 4.
