1/2 lb. pork tenderloin, cut into 1/2-inch cubes
1 t. oil
2 c. chicken broth
2 15-oz. cans white beans, drained and rinsed
2 4-oz. cans diced green chiles
1/4 t. ground cumin
1/4 t. dried oregano
salt and pepper to taste
6 to 8 sprigs fresh cilantro
In a skillet over medium heat, cook pork in oil for one to 2 minutes, until browned. Place pork in a slow cooker. Add remaining ingredients; stir. Cover and cook on low setting for 4 to 6 hours. Serves 6 to 8.
