1 c. milk
1 egg, beaten
1 c. all-purpose flour
1 t. baking powder
1 c. shredded pizza-blend cheese
1-1/2 c. pepperoni, diced
Whisk together milk and egg; stir in flour, baking powder and cheese.
Mix well; fold in pepperoni. Let stand for 15 minutes. Fill lightly
greased mini muffin cups 3/4 full. Bake at 350 degrees for 25 to
35 minutes, or until golden. Makes 3 dozen.
