3 eggs 2 c. sugar 1 c. oil 2 c. zucchini, grated 3 c. all-purpose flour 1/2 t. baking powder 1 t. baking soda 1/2 t. salt 3 t. cinnamon 3 t. vanilla extract 1/2 c. chopped walnuts
Beat together eggs, sugar, oil and zucchini in a large mixing bowl; add remaining ingredients. Pour into two, greased and floured 9"x5" loaf pans, or four, 4-1/2"x2-1/2" mini loaf pans. Bake at 350 degrees for one hour or until inserted toothpick comes out clean. Makes 2 loaves. | |
