1/2 c. butter, melted
1 c. all-purpose flour
salt and pepper to taste
4 boneless, skinless chicken breasts
8-oz. pkg. sliced mushrooms
16-oz. container whipping cream or half-and-half
3/4 to 1 c. grated Parmesan cheese
Add melted butter to a shallow bowl. Place flour in another shallow bowl; season generously with salt and pepper. Dip chicken pieces into butter; dredge in flour mixture. Arrange chicken in a lightly greased 3-quart casserole dish; set aside. Add butter remaining in dish to a skillet; heat over medium heat. Add mushrooms and sauté lightly; spoon mushrooms over chicken. Add enough cream or half-and-half to nearly cover all ingredients. Top generously with Parmesan cheese. Cover and bake at 425 degrees for 30 minutes, or until heated through. Makes 4 servings.
