2 c. canned garbanzo beans, rinsed and drained 2 cloves garlic, finely minced 1 t. jalapeño pepper, minced 1⁄2 t. salt 1⁄2 t. pepper 3 t. lemon juice 3 t. tahini 3 t. olive oil 1⁄2 to 1 c. tomato juice chopped black olives coarsely chopped tomato
Place garbanzo beans in a food processor. Cover and process until blended. Add garlic, jalapeño pepper, salt and pepper. Cover and process until combined. Add lemon juice, tahini and olive oil. Cover and process until well blended. Mixture will be thick. With machine running, slowly add enough tomato juice to make mixture the desired consistency. Transfer to a serving bowl. If desired, garnish with olives and tomato. Serves 10. | |
