Grandma Lucy’s Corn Fritters

4 ears sweet corn, cooked
2 eggs, beaten
1⁄4 c. milk
1⁄2 c. all-purpose flour
1 t. baking powder
1 t. sugar
1⁄2 t. salt
1 t. bacon drippings or oil
Optional: butter, maple syrup


Cut kernels from corn and place in a medium mixing bowl; stir in eggs and milk. Combine flour, baking powder, sugar and salt in a small bowl; stir into corn mixture, mixing gently. Heat bacon drippings or oil in a skillet over medium-high heat. Drop batter by 1⁄4 cupfuls into skillet and cook until lightly browned, flipping to brown the other side. Serve with butter and maple syrup, if desired. Makes one dozen.
