Skillet Meatloaf

1 lb. ground beef
1 onion, chopped
1 green pepper, chopped
4 saltine crackers, crushed
1-oz. pkg. ranch salad dressing mix
1 egg
1/4 c. barbecue sauce


In a bowl, combine beef, onion and green pepper; mix well. Add cracker crumbs and dressing mix; mix again. Shape beef mixture into ball; make a little hole in the middle. Crack the egg into the hole; mix again. Preheat a cast-iron skillet or 3 to 4 individual skillets over medium heat. Shape meatloaf to fit in skillet(s). Add meatloaf to skillet(s). Spread barbecue sauce on top. Cover and cook for 30 to 35 minutes for a large skillet and 20 to 25 minutes for smaller skillets, until meatloaf is no longer pink in the center. Reduce heat to low, if needed. Use a meat thermometer to check temperature if desired. Serves 3 to 4.
