1 t. oil 2 eggs 2 T. garden vegetable cream cheese 2 “everything spice” bagels, halved and toasted 2 slices Pepper Jack cheese 1/2 avocado, pitted and mashed 4 slices tomato several fresh spinach leaves
Heat oil in a non-stick skillet over medium heat. Break eggs into skillet and cook 3 to 4 minutes, turning once, until eggs are cooked to desired doneness. To assemble sandwich, spread cream cheese on bottom half of bagels. Top with egg, cheese, avocado, spinach and tomato. Serve immediately. Serves 2. | |
