1/2 c. butter 1/2 c. sugar 1 egg, beaten 1 c. mild-flavored molasses 2-1/2 c. all-purpose flour 1-1/2 t. baking soda 1/2 t. salt 1 t. cinnamon 1 t. ground ginger 1/2 t. ground cloves 1 c. hot water Garnish: whipped cream
In a large bowl, blend together butter and sugar; beat in egg. Stir in molasses; set aside. In a separate bowl, sift together flour, baking soda, salt and spices. Blend flour mixture into butter mixture; stir in hot water. Pour batter into a greased 9" round cake pan. Bake at 350 degrees for about one hour, checking the center for doneness with a toothpick. Cut into wedges; serve topped with whipped cream. Makes 8 servings. | |
