3 c. all-purpose flour
2 T. baking powder
3/4 t. salt
1/2 c. sugar
1-1/2 c. milk
1/2 c. oil
1 egg, beaten
1 egg yolk, beaten
3/4 c. apples, cored, peeled and diced
3/4 c. shredded sharp Cheddar cheese

Combine flour, baking powder, salt and sugar in a large bowl. In a separate bowl, combine milk, oil, egg and egg yolk. Add milk mixture to flour mixture, stirring until just moistened. Gently fold in apple and cheese. Equally divide batter between 2 greased 8"x4" loaf pans. Bake at 350 degrees for about 40 minutes, or until a toothpick inserted in the center comes out clean. Cool in pans on a wire rack for 10 minutes; remove from pans and cool completely on wire rack. Makes 2 loaves. To store, wrap loaves tightly and refrigerate.
