1/4 c. butter 1-1/2 t. cinnamon, divided 2 apples, cored, peeled and thinly sliced 3 eggs, beaten 1/2 c. frozen apple juice concentrate, thawed 1/2 c. all-purpose flour 1/4 c. half-and-half 1-1/2 t. vanilla extract 1/4 t. nutmeg 1/8 t. salt
Apple Cream:
1/2 c. plain yogurt 1/2 t. vanilla extract 2 T. frozen apple juice concentrate, thawed
Melt butter with 1/2 teaspoon cinnamon over medium heat in a 10" oven-proof skillet; add apples. Sauté until tender, about 4 minutes; set aside. Place eggs, apple juice concentrate, flour, half-and-half, vanilla, remaining cinnamon, nutmeg and salt in a food processor; process until smooth. Pour over apples; bake at 450 degrees until set, about 10 minutes. Prepare Apple Cream: Whisk all ingredients together until smooth. Cut cake into wedges; place on serving plates. Spoon Apple Cream on top before serving. Makes 6 servings.
