4 russet potatoes 1 lb. ground beef 1-1/4 oz. pkg. taco seasoning mix 1/2 c. water 1 c. shredded Cheddar cheese Garnish: sliced green onions Optional: salsa
Pierce potatoes several times with a fork. Bake at 400 degrees for 50 to 55 minutes, until fork-tender. With a sharp knife, cut an X in the top of each warm potato; fluff pulp with a fork and set aside. Brown beef in a skillet over medium heat; drain. Stir in seasoning mix and water; bring to a boil. Simmer over low heat for 5 to 7 minutes, stirring occasionally. To serve, top potatoes with beef mixture, cheese, onions and salsa, if desired. Makes 4 servings. | |
