1/4 c. butter
1/2 c. brown sugar, packed
6 slices canned pineapple
6 maraschino cherries
9-oz. pkg. yellow cake mix
Garnish: ice cream or whipped topping
Melt butter in a microwave-safe 9" round glass baking pan. Stir in brown sugar. Arrange pineapple slices in pan; place a cherry in the center of each. Mix cake batter as directed on package; pour batter over pineapple slices. Microwave, uncovered, on medium-high setting for 7 minutes. Microwave on high setting for 2 to 4 minutes, until a toothpick tests clean. Let stand one minute; invert cake onto a serving plate. Garnish as desired. Makes 8 servings.
