5 c. fresh or frozen blackberries 1/4 c. sugar 2 T. cornstarch 3 T. lemon juice 25 vanilla wafers, crushed 1/2 c. old-fashioned oats, uncooked 1/2 c. light brown sugar, packed 1/4 c. all-purpose flour 1/2 t. cinnamon 1/2 c. butter, melted Garnish: vanilla ice cream
Place blackberries in a cast-iron Dutch oven; sprinkle with sugar and set aside. In a cup, stir together cornstarch and lemon juice; add to berries and mix gently. In a bowl, combine vanilla wafer crumbs, oats, brown sugar, flour and cinnamon. Add butter; stir until crumbly. Sprinkle crumb mixture over berries. Bake, uncovered, at 400 degrees for 25 to 30 minutes, until bubbly and lightly golden. Serve warm, topped with a scoop of ice cream. Makes 4 to 6 servings. | |
