1-3/4 c. all-purpose flour 3/4 c. turbinado sugar or light brown sugar, packed 2 T. baking powder 2 t. cinnamon 1/2 t. sea salt 3/4 c. milk 1/3 c. oil 1 egg, beaten 1 t. vanilla extract 1 c. ripe peaches, peeled, pitted and diced Optional: additional sugar
In a large bowl, combine flour, sugar, baking powder, cinnamon and
salt. Stir until combined; set aside. In a separate bowl, mix together
milk, oil, egg and vanilla. Stir milk mixture into flour mixture, just until
combined. Gently stir in peaches. Fill greased or paper-lined muffin
cups with batter, 3/4 full. Sprinkle muffin tops with additional sugar,
if desired. Bake at 400 degrees for 20 minutes, or until a toothpick
inserted into the center comes out clean. Makes one dozen. | |
