1 lb. boneless, skinless chicken tenders 1 c. canned diced pineapple with juice 1 onion, coarsely chopped 1 green pepper, coarsely chopped 3/4 c. Caribbean-style marinade 2 c. canned black beans, drained 1 lb. broccoli, cut into bite-size flowerets cooked rice
Combine chicken, pineapple with juice, onion, green pepper and marinade in a slow cooker. Cover and cook on low setting for 4 to 5 hours, until chicken is nearly cooked. Add black beans and broccoli. Cover and cook for another hour, or until broccoli is tender. Serve chicken mixture over cooked rice. Serves 4 to 6. | |
