Zucchini-Crust Pizza

2 zucchini, shredded and packed
2 eggs, beaten
1/3 c. whole-wheat flour
1/2 c. shredded mozzarella cheese
1/2 c. low-fat pizza-blend cheese
1 T. olive oil
1 T. fresh basil, chopped
Garnish: favorite pizza toppings such as tomatoes, basil and fresh mozzarella cheese.


In a strainer, press zucchini to remove as much liquid as possible. Combine zucchini and remaining ingredients except garnish in a bowl; stir well. Spread mixture in a parchment paper-lined 12" round pizza pan. Smooth out mixture to cover pan. Bake at 375 degrees for 35 minutes, or until set. Top with desired toppings; return to oven until heated through. Cut into wedges to serve. Makes 6 servings.
