6 slices bacon, cut into 1-inch pieces 1 lb. ground beef 3/4 c. onion, chopped 3/4 c. green pepper, chopped 14-1/2 oz. can diced tomatoes 1-1/2 c. water 1/2 t. dried oregano red pepper flakes to taste 2 t. salt 1/8 t. pepper 6-oz. pkg. wide egg noodles, uncooked
In a skillet over medium heat, cook bacon until crisp. Drain, reserving drippings in pan; set aside bacon on a paper towel. Sauté beef, onion and green pepper in reserved drippings; drain. Stir in tomatoes with juice, water and seasonings; cover and simmer for 10 minutes. Bring to a full boil and add uncooked noodles, a few at a time. Reduce heat to medium-low and cover. Simmer for 10 minutes, or until noodles are tender. Sprinkle with crumbled bacon and serve. Makes 4 to 6 servings. | |
