Pineapple Bars

1 c. butter, softened
2 c. sugar
4 eggs
1-1/2 c. all-purpose flour
1/2 t. baking soda
1/2 t. salt
2-1/2 c. crushed pineapple, very well-drained
1/2 c. chopped nuts
Garnish: powdered sugar


In a large bowl, blend butter, sugar and eggs, adding one egg at a time. Beat in flour, baking soda and salt. Stir in pineapple gradually, distributing it evenly throughout the batter. Stir in nuts. Spread batter in a greased 13"x9" baking pan. Bake at 350 degrees for 35 to 40 minutes. Cool in pan for 10 to 15 minutes. Sprinkle with powdered sugar; cut into squares. Makes 16 to 20 bars.
