1 c. shortening or butter
1/2 c. brown sugar, packed
2 eggs
2 c. crushed pineapple, very well drained
4 c. all-purpose flour
1 t. baking soda
1 c. sugar
1/2 t. vanilla extract
In a large bowl, stir shortening or butter until smooth; blend in brown sugar. Stir in eggs and pineapple. In a separate bowl, mix flour, baking soda and sugar; stir into shortening mixture. Add vanilla. Drop dough by teaspoonfuls onto greased baking sheets. Bake at 350 degrees for 8 to 10 minutes. Makes 3 dozen.
