Easy Cherry Cobbler

15-oz. can tart red cherries
1 c. all-purpose flour
1 c. sugar, divided
1 c. 2% milk
2 t. baking powder
1/8 t. salt
1/4 c. butter, melted
Optional: vanilla ice cream or whipped topping


Bring cherries with juice to a boil in a saucepan over medium heat; remove from heat. Mix flour, 3/4 cup sugar, milk, baking powder and salt in a medium bowl. Pour butter into 6 one-cup ramekins or into a 2-quart casserole dish; pour flour mixture over butter. Add cherries; do not stir. Sprinkle remaining sugar over top. Bake at 400 degrees for 20 to 30 minutes. Serve warm with ice cream or whipped cream, if desired. Makes 8 servings.
