2 eggs, beaten
1/2 T. milk
1/4 c. black or pinto beans, drained and rinsed
1/4 c. green peppers or green onions, chopped
1/4 c. shredded Co-Jack cheese
salt and pepper to taste
Coat a microwave-safe 12-ounce coffee mug with non-stick vegetable spray. Add eggs and milk; beat until blended. Add beans and green pepper or onions. Microwave on high until eggs are almost set, 30 to 45 seconds longer. Season with salt and pepper. Top with cheese and salsa. Makes 2 servings.
