2 slices bacon 2 T. onion, chopped 1 T. vinegar 1 T. water 1-1/2 t. sugar 1/4 t. salt 1/4 t. pepper 2 c. green and/or red cabbage, shredded 1 apple, cored and chopped 2 T. sweetened dried cranberries or raisins 1/4 c. sour cream or plain yogurt
In a skillet over medium heat, cook bacon until crisp. Remove bacon to a paper towel, reserving drippings in skillet. Sauté onion in drippings for 2 minutes; stir in vinegar, water, sugar, salt and pepper. Bring just to boiling. Add cabbage, apple and cranberries or raisins; cover and cook for 5 minutes. Remove from heat; stir in sour cream or yogurt. Sprinkle with crumbled bacon and serve warm. Makes 4 servings. | |
