3/4 c. butter, softened 3 T. oil 1 c. brown sugar, packed 2/3 c. baking cocoa 1 T. instant coffee granules 1 t. baking soda 1 t. cinnamon 2 egg whites 1/4 c. vanilla low-fat yogurt 1-1/2 c. all-purpose flour 1/4 to 1/2 c. powdered sugar, sifted
Beat butter with an electric mixer on medium speed 30 seconds. Add oil, brown sugar, cocoa, coffee granules, baking soda and cinnamon. Beat until combined, scraping bowl. Beat in egg whites and yogurt until
combined. Beat in as much flour as you can. Stir in any remaining flour. Place powdered sugar in a small bowl. Roll into 1-inch balls and roll in powdered sugar. Place 2 inches apart on lightly greased baking sheets. Bake at 350 degrees for 8 to 10 minutes or until edges are firm. Transfer to a wire rack and let cool. Makes about 3 dozen. | |
