6 eggs, hard-boiled and peeled
1/4 c. mayonnaise
1 t. sweet pickle relish
1 t. sweet pickle juice, or more as needed
1 t. mustard
1/2 t. lemon juice
1/8 t. salt
pepper to taste
Garnish: smoked Spanish paprika
Slice eggs in half lengthwise. Remove yolks and place in a bowl; set whites on a serving platter. With a fork, mash yolks into a fine crumble.
Add remaining ingredients except garnish; mix well. May add a little more pickle juice for a thinner consistency. Spoon heaping teaspoonfuls
of yolk mixture into egg whites. Sprinkle with paprika; chill until serving time. Makes one dozen.
