1/2 c. butter 1-1/4 c. sugar 1/2 t. vanilla extract 3 eggs, beaten 2 c. all-purpose flour 1 t. baking powder 1 t. baking soda 1/4 t. salt 1 to 2 t. nutmeg 1 c. buttermilk, or 1/2 c. plain, yogurt combined with 1/2 c. milk
In a large bowl, blend butter and sugar; stir in vanilla. Add eggs, one at a time, mixing well after each; set aside. In a separate bowl, sift together flour, baking powder, baking soda, salt and nutmeg; add to butter mixture. Stir in buttermilk, a little at a time. Spread batter in a greased and floured 13"x9" baking pan. Bake at 350 degrees for 30 minutes, or until a toothpick inserted in the center comes out clean. Cut into squares. Makes 12 servings. | |
