Cayenne Cheddar Crackers

2 c. all-purpose flour
1 t. salt
1/4 t. cayenne pepper
1/4 t. dry mustard
3/4 c. chilled butter
1/2 c. shredded Cheddar cheese
6 to 8 T. cold water


Combine the first 4 ingredients in a mixing bowl; cut in butter with a pastry cutter until coarse crumbs form. Stir in Cheddar cheese and just enough water to hold the dough together; shape into a ball and wrap in plastic wrap. Refrigerate dough for at least 30 minutes. Roll dough out on a lightly floured surface into a 16"x12" rectangle; cut into 3"x1" strips using a sharp knife or pizza cutter. Place on parchment paper-lined baking sheets; bake at 350 degrees for 10 to 12 minutes. Cool; store in airtight containers. Makes 4 dozen.
