Enjoy this recipe from Old-Fashioned Country Christmas.

2 lbs. sweet potatoes (5 med. or 3 lg.)
1 T. cornmeal
3/4 c. sugar
1/4 t. salt
1/2 c. raisins
1/2 c. butter
2 eggs
1/2 c. milk
1/4 t. nutmeg
1/2 t. vanilla extract
Bake potatoes in jackets until tender. Peel, then whip together with the other ingredients with electric mixer. Spoon into a baking dish. Bake at 350 degrees for about 30 minutes. Makes 6 servings.
