Amish Breakfast Casserole

1 lb. ground pork breakfast sausage, browned and drained
4 c. frozen shredded hashbrown potatoes, thawed
3/4 c. sweet onion, diced
10 eggs, beaten
2 c. shredded Cheddar cheese
1-1/2 c. shredded Swiss cheese
1-1/2 c. cottage cheese


Combine all ingredients in a large bowl; mix well. Spoon into a greased 13"x9" baking pan. Bake, uncovered, at 350 degrees for 35 to 40 minutes, until eggs are set and cheese is melted. Let stand 10 minutes before serving. Makes 10 servings.
