1⁄4 lb. bacon, chopped 1 onion, diced 10-oz. pkg. frozen lima beans 1⁄2 c. water salt and pepper to taste 10-oz. pkg. frozen corn 1⁄2 c. whipping cream 1-1⁄2 t. fresh thyme, minced Garnish: 2 t. fresh chives, snipped
Cook bacon until crisp in a Dutch oven over medium-high heat. Remove bacon, reserving about 2 tablespoons drippings in Dutch oven. Add onion; sauté about 5 minutes, or until tender. Add beans, water, salt and pepper; bring to a boil. Reduce heat; cover and simmer 5 minutes. Stir in corn, whipping cream and thyme; return to a simmer. Cook until vegetables are tender, about 5 minutes. Toss with bacon and chives before serving. Serves 6. | |
