4 rainbow trout fillets
4 T. melted butter
1 t. lemon zest
2 T. lemon juice
1 T. lemon pepper seasoning
Preheat broiler on high; position oven rack on level closest to the broiler. Spray an aluminum foil-lined baking sheet lightly with non-stick vegetable spray. Arrange fish fillets on baking sheet; set aside. Combine melted butter, lemon zest and lemon juice; brush over fish. Season with lemon pepper. Broil fish for 5 minutes on rack closest to broiler. Serves 4.
