1/3 c. vegetable oil
1/4 c. seasoned rice vinegar
3/4 t. Dijon mustard
1 clove garlic, pressed
1 small head Bibb lettuce, torn
1 small head green leaf lettuce, torn
1 apple, chopped
1/3 c. coarsely chopped walnuts, toasted
1/3 c. dried cranberries
1/3 c. crumbled Gorgonzola cheese
Whisk together first 4 ingredients in a small bowl; set aside. Just before serving, combine Bibb lettuce and next 5 ingredients in a large bowl. Pour dressing over salad; toss gently. Serves 8.
