1 T. oil
2-lb. boneless, skinless turkey breast
12-oz. pkg. favorite-flavor stuffing mix
1 sweet potato, peeled and cubed
1/2 c. celery, chopped
1/2 c. onion, chopped
1/2 c. carrot, peeled and chopped
2 c. chicken broth
1/2 c. chopped walnuts
1/2 c. fresh cranberries
Heat oil in a skillet over medium heat. Saute turkey in oil until browned on both sides, about 5 minutes; drain. Combine turkey and remaining ingredients except nuts and cranberries in a slow cooker. Cover and cook on low setting for 7 to 8 hours, or until turkey is no longer pink in the center. About one hour before serving, stir in walnuts and cranberries. Serves 6 to 8.
