Poppy Seed-Cheese Bread

1 onion, chopped
1/2 c. butter, melted
2 T. poppy seed
1/8 t. salt
1 loaf French bread
1 lb. Swiss cheese, thinly sliced


In a skillet over medium heat, sauté onion in butter until tender. Stir in poppy seed and salt. Place bread on a sheet of aluminum foil. Score loaf at 1/2-inch intervals, but do not cut all the way through. Place a slice of Swiss cheese into each cut. Drizzle butter mixture over top. Wrap bread tightly in foil. Bake at 350 degrees for 30 minutes, or until bread is crisp and cheese is melted. Slice before serving. Serves 8.
