Apple Snickerdoodles

1 c. butter, softened
1-1/2 c. sugar, divided
1 c. brown sugar, packed
2 eggs, beaten
1 t. vanilla extract
3 c. all-purpose flour
1/2 t. baking soda
1/2 t. cream of tartar
1/4 t. salt
4 t. cinnamon, divided
1/4 c. apple, peeled, cored and finely grated


In a large bowl, combine butter, 1-1/4 cups sugar and brown sugar; mix until creamy. Add eggs and vanilla; stir until smooth. Add flour, baking soda, cream of tartar, salt and 2 teaspoons cinnamon; mix until combined. Fold in grated apple. Cover and refrigerate dough for at least 30 minutes. In a small bowl, combine remaining sugar and cinnamon. Scoop dough into one-inch balls; coat in sugar mixture. Arrange on parchment paper-lined baking sheets. Bake at 350 degrees for about 8 to 10 minutes, until lightly golden. Cool completely on wire racks. Makes 2 dozen.
