14-3/4 oz. can salmon, drained and flaked
1/4 c. onion, finely chopped
1/4 c. cornmeal
1/4 c. all-purpose flour
1 egg, beaten
3 T. mayonnaise
salt and pepper to taste
2 T. oil
Combine all ingredients except oil. Mix until well blended; form into
4 to 5 patties. Heat oil in a skillet over medium heat. Add patties and cook until golden on each side, turning only once as patties are fragile. Drain on paper towels. Makes 4 to 5 servings.
