Italian Breakfast Cake

1 c. sugar
3 T. shortening
1 T. butter, softened
3 eggs, beaten
1 c. milk
4 c. all-purpose flour
3 T. baking powder
1/8 t. salt
2 T. orange or vanilla extract
zest and juice of 1 orange


In a large bowl, mix together all ingredients until a sticky dough forms. Pat dough into a greased and floured 13"x9" baking pan. Bake at 350 degrees for 60 minutes, or until cake tests done with a toothpick. Serves 12.
