12 carrots, peeled and sliced
1/3 c. Dijon mustard
1/2 c. brown sugar, packed
1 t. fresh ginger, peeled and minced
1/2 t. salt
1/8 t. pepper
Combine all ingredients in a slow cooker. Cover and cook on high setting for 2 to 3 hours, until carrots are tender, stirring twice during cooking. Makes 10 to 12 servings.
