1 c. all-purpose flour 1 c. sugar, divided 6 T. baking cocoa, divided 1-1/2 t. baking powder 1/4 t. salt 1/2 c. milk 3 T. oil 1 t. vanilla extract 1/2 c. mini semi-sweet chocolate chips 1 c. brewed strong coffee Garnish: vanilla ice cream or whipped topping
Combine flour, 2/3 cup sugar, 4 tablespoons cocoa, baking powder and salt in a large bowl. In a separate bowl, stir together milk, oil and vanilla. Add to dry ingredients, stirring just until blended. Spread batter evenly into a lightly greased 8"x8" baking pan. Combine chocolate chips with remaining sugar and cocoa; sprinkle evenly over batter. Bring coffee to a boil; pour evenly over batter.
Do not stir. Bake at 350 degrees for 25 to 30 minutes, or until cake springs back when lightly pressed in center. Garnish as desired. Serves 8 to 10. | |
