Sweet Potato Biscuits

1 c. sweet potatoes, peeled, cooked and mashed
1 T. butter, room temperature
1 T. sugar
1/2 t. baking soda
1/3 c. buttermilk
2 c. all-purpose flour
1 t. salt


In a bowl, beat sweet potatoes, butter and sugar until blended. In a separate bowl, dissolve baking soda in buttermilk; add potato mixture and mix well. Combine flour and salt; add to potato mixture and mix well. Roll out dough on a floured surface to 1/2-inch thick. Cut with a biscuit cutter; arrange on a greased baking sheet. Bake at 400 degrees for 15 to 20 minutes, until golden. Makes about one dozen.
