oil for frying
4 pieces frozen breaded chicken strips
2 c. mashed potatoes
1 c. shredded Cheddar cheese
14-oz. can corn, drained
Heat one inch oil in a saucepan to 350 degrees. Add chicken strips and cook until heated through, 2 to 3 minutes. Remove from pan; drain on a paper towel-lined plate. Cut chicken into bite-size pieces. To serve, layer warmed potatoes, cheese, warmed corn and chicken among 4 bowls. Makes 4 servings.
