Chewy Gingerbread Bars

4-1/2 c. all-purpose flour
2 t. baking soda
3 t. ground ginger
1-1/2 t. cinnamon
1/4 t. salt
1-1/2 c. butter, softened
2 c. sugar
2 eggs, beaten
1/2 c. molasses
1/2 c. coarse sugar


Coat a 15"x10" baking pan with nonstick cooking spray or line with parchment paper. In a medium bowl, stir together flour, baking soda, spices and salt. In a large bowl, beat butter with an electric mixer on low speed for 30 seconds. Gradually add sugar. Beat until combined, scraping bowl as needed. Beat in egg and molasses. Beat in as much of the flour mixture as you can with the mixer. Stir in any remaining flour mixture. Pat dough into the prepared pan. Sprinkle with coarse sugar. Bake at 350 degrees for 20 minutes, or until set and edges are beginning to turn golden. Cool in pan on a wire rack. Cut into bars. Makes 2 dozen.
