1 lb. lean ground beef 3 T. Key lime juice 1⁄4 c. fresh cilantro, chopped, divided salt and pepper to taste 4 whole-wheat hamburger buns, split and toasted 1 mango, pitted, peeled and sliced Garnish: lettuce
Creamy Burger Spread: 1⁄2 c. light cream cheese, softened 1⁄2 c. plain Greek yogurt 3 green onion tops, chopped
In a bowl, combine beef, lime juice, 3 tablespoons cilantro, salt and pepper. Form beef mixture into 4 patties. Spray a large skillet with non-stick vegetable spray. Cook patties over medium heat for 6 minutes. Flip patties, cover skillet and cook for another 6 minutes. Place lettuce on bottom halves of buns and top with patties. Prepare Creamy Burger Spread: Combine all ingredients until completely blended. Cover and refrigerate at least 15 minutes. Add Creamy Burger Spread onto bun tops. Top with mango slices and remaining chopped cilantro. Add bun tops. Serves 4.
