Aunt Bessie’s Fresh Apple Cake

2 eggs, beaten
1 c. oil
2 c. sugar
1 t. vanilla extract
2-1/2 c. self-rising flour
1 T. cinnamon
3 c. apples, peeled, cored and diced
1 c. chopped walnuts


In a large bowl, beat eggs, oil and sugar with an electric mixer on medium speed. Mix in vanilla; set aside. In another bowl, sift together flour and cinnamon; add to egg mixture. Fold in apples and walnuts. Divide batter between 2 greased 8"x8" baking pans. Bake at 350 degrees for about 45 minutes. May also use a 13"x9" baking pan; bake for about one hour. Cut into squares. Makes 18 servings.
