12-oz. pkg. semi-sweet chocolate chips
1 c. applesauce
1 t. almond extract
3 c. powdered sugar
2/3 c. sweetened, dried cranberries, chopped
1-1/2 c. walnuts, finely chopped and divided
Combine chocolate chips, applesauce and extract in a large microwave-safe container. Microwave for 2 to 3 minutes on high setting until chocolate melts, stirring every 30 seconds. Stir until smooth. Add powdered sugar, cranberries and one cup walnuts; stir until well-mixed. Chill in refrigerator until firm enough to shape, about
one hour. Scoop up mixture by teaspoonfuls and roll into balls; roll in remaining walnuts to coat. Keep refrigerated in an airtight container up to one week. Let stand at room temperature for about 30 minutes before serving. Makes about 3 dozen.
