2 c. all-purpose flour 3/4 c. sugar 2-1/2 t. cinnamon 2 t. baking powder 1/2 t. salt 1 c. milk 1/4 c. butter, melted 1 egg, beaten 1-1/2 t. vanilla extract 1/2 c. apple, cored, peeled and finely diced 12 caramels, unwrapped and diced
Combine flour, sugar, cinnamon, baking powder and salt in a large bowl; set aside. In a separate large bowl, mix together milk, butter, egg and vanilla; add flour mixture, stirring just until blended. Stir in apples and caramels. Divide batter evenly in 12 paper-lined muffin cups, bake at 350 degrees for 25 minutes or until tops spring back when lightly pressed. Serve warm. Makes 12. | |
