8-oz. pkg. chicken-flavored stuffing mix 1/2 c. butter, melted 1 c. chicken broth 2-1/2 c. cooked chicken, diced 1/2 c. onion, chopped 1/2 c. celery, chopped 1/2 c. mayonnaise 1 t. salt 2 eggs, beaten 1/2 c. milk 10-3/4 oz. can cream of mushroom soup 1 c. shredded Cheddar cheese
In a large bowl, combine stuffing mix, butter and broth; press half the mixture into a greased 13"x 9" baking pan. In a separate bowl, combine chicken, onion, celery, mayonnaise and salt; spread over stuffing mixture. Top with remaining stuffing mixture. In a small bowl, whisk together eggs and milk; pour over top. Cover and refrigerate 8 hours to overnight. Uncover pan; spread with soup. Bake, uncovered, at 350 degrees for 50 minutes. Sprinkle with cheese; bake for an additional 10 to 15 minutes, until cheese is melted. Serves 6. | |
