Nectarine Crisp

1-2/3 c. sugar, divided
1/2 t. cinnamon
1/2 t. salt
1 T. cornstarch
1/3 c. water
4 c. nectarines, sliced
1/3 c. plus 1 T. chilled butter, divided
3/4 c. all-purpose flour
Garnish: whipped topping


Combine 2/3 cup sugar, cinnamon, salt and cornstarch in a saucepan; pour in water and boil for one minute. Place nectarine slices in a buttered 10"x6" baking pan; pour syrup over the top. Dot with one tablespoon butter and mix gently. Combine flour, remaining sugar and butter together in a separate bowl until mixture resembles coarse crumbs; sprinkle over fruit. Bake uncovered at 350 degrees for 40 minutes; serve with whipped topping, if desired. Serves 4 to 6.
