1 lb. ground turkey
1/4 t. garlic powder
1/4 t. Italian seasoning
2 14-oz. cans beef broth with onion
14-1/2 oz. can diced tomatoes
8-oz. pkg. rotini pasta, uncooked and divided
1/2 c. shredded mozzarella cheese
Garnish: 1/4 c. grated Parmesan cheese
In a skillet over medium heat, brown ground turkey; drain and add seasonings. Stir in broth and tomatoes with juice; heat to boiling.
Add 2 cups uncooked rotini; reserve remaining rotini for another recipe. Cover skillet; cook over medium heat for 12 to 14 minutes, until rotini is tender. Stir in mozzarella cheese; top each serving with Parmesan cheese. Serves 4 to 5.
